How to make your own garam masala

Garam masala is a spice blend made with up to 10 different spices.

Literally meaning ‘hot mix’ garam masala can be bought pre-made from any supermarket or wholesaler but there’s nothing like making your own – it tastes so much better and it’s really easy too.

There are many variations with some versions including mace and nutmeg.  Below are our preferred ingredients – we hope you’ll agree they create a complex balance of flavours and aromas perfect for any curry dish….

Equal parts:
bay leaves
green cardamom
black cardamom
cinnamon
cloves
black peppercorns

3x the amount of:
cumin seeds
coriander seeds

Take a large mixing bowl and add the spices one at a time….

At this stage you can lightly toast the spices in a pan until they become aromatic.  Next place them in an electric spice grinder and blend until a smooth powder….

Finally, to ensure a perfectly fine powder consistancy, sieve the freshly ground spices….

And there you have it, your very own homemade garam masala.  Perfect!  Store in an airtight contain and it will keep for months, just waiting to be added to your next curry dish.
